Greek Crisis

In recognition of the on-going and seemingly never ending Greek economic tragedy The Frau and I made something particularly yummy.

The garden is pumping-out a really nice and regular crop of spinach which was the foundation of the yumminess.

Take a pound of spinach, saute in water and drain in a colander.  


Chop coarsely and mix with a beaten egg, cottage cheese, feta and Parmigiano Reggiano cheese, nutmeg, dill weed, salt and pepper.


Take fillo dough and fabricate these triangles brushed with lots of melted butter.


Bake.


Use the remainder of the fillo dough sheets and spinach blend to fabricate a pie.


Bake.


A very putzy and busy recipe but worth the trouble.  Had the triangles for dinner and the pie for breakfast.

Yum!
