Winner Winner....

Chicken Dinner.....

I happen to believe that the bone-in, skin-on, chicken thigh is a thoroughly underrated menu item.   Excellent dollar value too.

Season only with fresh-cracked pepper and sea salt. 

Start skin-side down in a cold skillet. Cook 40-50 minutes on medium or until browned. Flip and cook 15 minutes more or until 160F.

Set aside on a plate to rest and make pan gravy from all of the deliciousness in the skillet. 


Serve with some mashed baby reds and fresh frozen whole kernel sweet corn.

Elegant chow in a simple way.  

Perfect when you’re snowed-in…..

Winner Winner Chicken Dinner




I struggled with what to call this 5.7 pound (before stuffing) bird. In normal times it would be Sunday Roast Chicken Dinner With Fixn's. Something reserved for family, company or just a traditional Sunday dinner. 

Nowadays something else.  COVID-19 ChickenChicken Virus?  Nope, too grim.  

Anyways it's pretty good comfort food after a sunny day's work.

Hence-forth this shall be recorded in the annals and spoken in the oral traditions as:

Chicken à la Quarantine




Dressing, mashed baby reds, peas and corn from last year's garden and low-fat gravy.

Good grub.

And days worth of leftovers while under lock down. 

We'll all emerge from this shit storm better for the experience.  

And likely a few pounds heavier.....
