Cinco De Mayo Chicken Enchildadas



Earlier this afternoon I assembled a casserole of homemade chicken enchiladas. 

It's been a busy day and in recognition of Cinco De Mayo we dined like Aztec Royalty this evening.

Baked enchiladas in salsa verde smothered in three Mexican cheeses.  Frijoles, shredded lettuce, chopped tomatoes and sour cream.  Tortilla chips on the side too.
