When you bring home your fresh fish fillet wrapped in a former copy of the Green Bay Press Gazette you have an inkling that you have the real deal from a real fish market.

Grilled indirectly on the Weber kettle with a double fistful of soaked apple chips for spicy flavor this was the result.
Yummy.
Served with our favorite garden spinach salad topped with locally-sourced strawberries, California walnuts, goat cheese and a light vinaigrette along with the historically significant 'ant rice' (long story) it was all pretty damn good,
Birthday festivities followed.
