Leftovers


If you happen to have a quantity of leftover venison barbacoa (thank you Rick Bayless) in the fridge from last weekend you should to the following:

Preheat your oven to 350

Line a pan with foil

In the microwave separately warm your leftover barbacoa, rice and beans

Fill the pan with white corn tortilla chips

Add splooches of hot beans, rice and barbacoa. Top all of the with three big, heaping handfulls of shredded Mexican cheeses

Bake until the cheese is melted

Serve

Cold toppings include sour cream, chopped tomatos, scallions, black olives, cilantro, scallions or whatever

Wash it down with the adult beverage of your choice

Raising a toast to eating more whitetails
